We had the good fortune of connecting with Emi Kobayashi and we’ve shared our conversation below.

Hi Emi, is there something that you feel is most responsible for your success?
There are many sushi pop-up and catering businesses in Los Angeles, but Morikase stands apart from the rest.
Our approach is not simply traditional Edomae-style sushi — instead, we build on the foundation of authentic Japanese sushi while incorporating a variety of creative, genre-defying appetizers that reflect the modern, diverse spirit of LA.
What makes Morikase unique is our commitment to offering a modern sushi experience that blends tradition with innovation, free from conventional boundaries.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
If my best friend were visiting for a week, I’d plan a relaxing and nature-filled itinerary to recharge and reconnect. We’d start with a visit to a beautiful winery surrounded by greenery—somewhere peaceful where we can sip wine and chat for hours. I’d also take them to the coast for a beach day, just chilling by the ocean, watching the waves, and enjoying the sunset.

One day would be dedicated to exploring a local farmer’s market and having brunch at one of my favorite hidden gem cafés that serves seasonal dishes. I’d also love to take a road trip to Arizona with them—it’s been on my bucket list for a while. The desert landscapes, sunsets, and star-filled skies would be the perfect setting for deep conversations and unforgettable memories.

Throughout the week, we’d mix good food, natural beauty, and quality time with the people I care about most. It’s all about slowing down, being present, and sharing simple but meaningful moments.

Who else deserves some credit and recognition?
I worked as an Italian chef in Japan for about 15 years.
After moving to Los Angeles ,I met Chef Mori while working as a lead chef at KENBEY Sushi HE saw my potential and encouraged me to take the next step.
With his support, I began learning sushi all over again support, from scratch under his guidance.
Without him,I wouldn’t be where I am today
