Meet Genji Sato | chef

We had the good fortune of connecting with Genji Sato and we’ve shared our conversation below.
Hi Genji, do you have any habits that you feel contribute to your effectiveness?
It was the very first day of middle school football practice when my coach said he wanted to teach us one thing. He said it doesn’t need any special techniques or skills. Anyone can do it, but so many people don’t, and they miss chances because of that.
“Don’t be late. Come before on time,” he said.
He told us that if you are late, you make the whole team wait and cause trouble for others. But if you come early, you don’t have to rush, and you can take your time to get ready. You also have time to help others, and that builds trust. He said trust is the most important thing in being a team and in life.
He also said that being on the field before the other team gives you a mental advantage.
“Being comfortable is the best and only way to give your all,” he said. I still remember this lesson even now.

Alright, so let’s move onto what keeps you busy professionally?
It’s the same at work. When I was younger, labor laws didn’t really matter, and in my job, there were no timecards or anything. If you wanted, you could come early and start working. At first, I started getting ready before my boss or seniors came. With more time, I could do more careful work, and they trusted me more. So I got more responsibilities, and I really enjoyed getting better and learning every day.
It’s been more than 30 years, and I’m still doing it. I wake up at 4:30am every morning, go to the fish market, and then go straight to the restaurant to start preparing.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
I would start with the Chargers game @ SoFi stadium Sunday afternoon.
I have a season ticket, that I definitely want show off to my friends,
Which is an accomplishment to me of what I have been doing.
Next day it might be good idea going to a local bar and enjoy some Monday night football.
Friends, beer, and football – there is nothing more we need.
Depending on the season, we can go to dodgers, lakers, kings, Galaxy, maybe Angeles or clippers!
This is LA we have everything.
