We had the good fortune of connecting with Mignon Alexandria and we’ve shared our conversation below.

Hi Mignon, can you walk us through the thought-process of starting your business?
My thought process with starting Champignon Eats was mainly “How can I make a income doing what I love?” That’s how it all started. I wanted to become my own boss, have artistic freedom, and make people happy through my food. It became a no brainer and a win win.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Champignon Eats is a vegan pop up that specializes in mushroom based sandwiches and items. There is a lot of thought and care that goes into all of my items especially ingredients. For example I choose to use chickpea flour instead of regular bleached flour for nutritional purposes.I also use romaine lettuce, fresh roma tomatoes and my sauces are made day of with fresh ingredients as well. These all seem like little things, but I want my food not only to taste good but to be as good for you as a “Fried sandwich” can be.There’s a lot of love and thought that go into my items and people can tell, which validates all the hard work I put into it.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I would take my friends hiking in Malibu , Dancing downtown and to eat I would definitely take them to Vegan playground and Vegan Exchange for some of the best vegan food in the city.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
My family and close friends are the some of the main reasons why I am where I am. Having an encouraging environment of people who believe in you and push you to recognize your own potential is a blessing. I believe what is meant for you is meant for you so even if you don’t have that support you can still get there, but having people who love and wish you well definitely makes the road a lot smoother in my opinion.
