We had the good fortune of connecting with Rose Seybold and we’ve shared our conversation below.
Hi Rose, how has your background shaped the person you are today?
I grew up in the Santa Ynez Valley. When I was a kid I always thought I would follow in my family’s footsteps and become a teacher. My freshman year of college was in 2008 when the great recession hit and I lost my funding for college. This shift led me to taking classes at community college and working in the service industry. The year I turned 21 I decided to spend the summer in Alaska working in a remote upscale lodge. When I got home to Solvang I was older and wiser and eager to jump into the wine industry. The movie “Sideways” had come out while I was in high school which inspired a curiosity about the wine world. A friend set me up with a job at Roblar Winery and it was there I really fell in love with planning and working events. I learned all about pairing wine with food, florals, and managing in an event setting.
Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Rose to the Occasions is woman run wedding planning business based in SLO County. Coming from a large family I grew up helping my family host weddings at our property in Santa Ynez, CA. What sets my business apart is the diverse background I’ve had in the event industry. I have held jobs in many aspects of the wedding industry including photography, florals, catering, and beauty. This sets Rose to the Occasions apart from other wedding planners as I know what goes into every aspect of the wedding industry and provide my clients with understanding of different vendors.
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
The first place I would take them would be Giussepe’s in Pismo Beach for authentic Italian food and some great wine. The following day I would take her to San Luis Obispo for a morning workout at Headstrong Fit followed by breakfast at Sally Loo’s. We’d spend some time downtown SLO shopping, grab sandwiches at High Street Deli, then go wine tasting out at Edna Valley Winery. For the next day we would go kayaking at Port San Luis checking out the ocean life. We’d grab lunch at the Custom House in Avila then hit Pier Front next door for some live music and local beer. It wouldn’t be a proper visit without taking her to my hometown of Solvang and giving them the full “Danish” experience by eating Abelskeivers at the Solvang restaurant and go wine tasting in Los Olivos.

My husband Hayden, who has always believed in me, encouraged me, and inspired me to follow my passion.
