We had the good fortune of connecting with Tommy Marudi and we’ve shared our conversation below.

Hi Tommy, we’d love to hear about how you approach risk and risk-taking.
Running a food truck is all about taking risks. Each time we go out on the streets or work at an event or festival, we do not know the outcome of it; depending on a lot of factors, it could be a successful run or a complete failure. Each event is a risk since you could either sell out quickly if it’s busy and then you are missing sales because you don’t have enough product, or if it’s slow, you can get stuck with extra product therefore, each run is very risky. We have learned over time how to minimize the risks but you still have to take the risk in order to be out there and learn how to improve from time to time.
All great things in life come with a risk.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
Running a food business is very hard, and food trucks in specific. Every day we work on the streets of L.A. and there is a lot of competition, so we have to stay unique and creative, whether it’s with the dishes we serve or our business strategies and bringing in new customers in new areas. We have the advantage of being mobile, so we can spread our flavors all around town and bring our creativity to the people. We work very hard to stay on top and make sure we are always on top of our competition, we learn new things everyday and learn from the mistakes we make as well.
I can’t do it by myself, so I want to give a shoutout to my team that helps me navigate through the many conditions we go through.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
First off, I would definitely take them to a music festival in California to enjoy the artists and the vibes at these great shows but also to enjoy the many different food options that you find at these festivals. L.A streets are full of different cultures and you can find a varaity of amazing foods related to theese different cultures like Korea town, Downtown L.A and Hollywood.
We also have the best beaches and weather to match so a day at the beach is a must!

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
We started our journey on a reality TV show which is hosted by a celebirty chef , Tyler Florence, at first I thought that he is just a famous face to help promote the show but actualy he was involved in whole proccess throughout the show and gave us life changing advice that led us to wining the show and start our business. To this day we use his strategies and advice in our everyday operations and I will always be grateful for that. Even though chef Tyler is my mentor that got me to start my journey in the food truck world, my family and kids are the ones that I push hard for every day and the reason for my success.
