We had the good fortune of connecting with Paolo Beatino and we’ve shared our conversation below.
Hi Paolo, can you walk us through the thought-process of starting your business?
The initial spark came from identifying a specific gap in the market. My fiancee, who was attending a course in LA, noticed that here the cocktail catering was not being addressed effectively. Having worked with me in Italy for many years, she knew I could give much more than what was offered, and she pushed me to do market research, and get feedback from potential customers.
I realized that my background and skills in bartending and mixology uniquely positioned me to address this need. I was confident that my expertise could bring a fresh perspective and innovative solutions to this market.
Before diving in, I hired a business consultant to conduct thorough market research to validate my idea. We analyzed market trends, competitor offerings, and potential customer demographics. This research confirmed that there was indeed a demand for high level mixology and cocktail catering and provided insights into how I could differentiate my business.
With this clear understanding of the market and the opportunity, I developed a comprehensive business plan. This plan outlined my business model, target audience, marketing strategy, financial projections, and operational plan. It served as a roadmap to guide my efforts and secure initial funding. Obviously, starting a business involves risks, so I carefully assessed the potential challenges and devised strategies to mitigate them. This included securing initial funding, building a reliable team, and developing contingency plans for possible setbacks.
The first big step, and maybe the hardest one, was obtaining an investor Visa to come and work here in the US, since I come from Italy and I just moved to LA to start my company.
Once the groundwork was laid, I focused on executing my plan. This involved specific steps I took to start the business, such as product development, building a website, growing my social medias, securing partnerships. I was hands-on in every aspect to ensure that my vision was realized accurately.
Throughout the journey, I’ve remained committed to continuous learning and adaptation. The business environment is dynamic, and being open to feedback and willing to pivot when necessary has been crucial to our growth and success. I had made several adjustments during the first six months, and still today I am flexible to make the changes required by the evolving market.
Ultimately, my thought process was driven by a clear vision for the future. I wanted to create a business that not only addresses a market need but also makes a positive impact on the bartending industry and in the mixology community. This vision continues to motivate me and guide the direction of the company.
Let’s talk shop? Tell us more about your career, what can you share with our community?
I am Paolo Beatino, also known as Pablito the bARTender, I come from Alba, Italy. Alba is an enchanting land known for truffles, fine wines and Nutella. This passion for rich, robust red wines permeates my craft. It ensures each cocktail is a masterpiece in a glass. I started taking my first steps in the bar world rather late, at 24 years old and only to fund my law studies, but quickly, I discovered my true calling behind the bar – a love story that began at first sight. Even after finishing university I preferred to put aside penal codes and law textbooks rather than my jiggers and shakers, I combed my handlebar mustache and specialized in mixing. For over twelve years I was head bartender and manager of GF Party, a leading Turin company in the cocktail catering sector and since January 2022 I am barmanager and head barman at the Gaf in Cambiano , a modern cocktail bar restaurant not far from Turin. One of my main qualities is the ability to convey my passion for the products and my work and I love to do this with my students during my courses or during the masterclasses and experiences I carry out in Casa Martini and Terrazza Martini.
I am also the co-founder and owner of a new reality in the cocktail catering sector in Los Angeles, California. The idea is to bring the fashion of the Italian aperitif and the Dolce Vita style typical of the Bel Paese to the United States, with private or public bartending services of the highest level.
As a renowned bartender in Italy, my art lies in creating cocktails that are not just drinks but experiences. What sets me apart is my dedication to blending traditional techniques with innovative flavors, creating unique and memorable concoctions. I see each cocktail as a canvas, and each ingredient as a brushstroke, working meticulously to balance taste, aroma, and presentation.
I am most proud of all my signature cocktails, for example I just presented for a competition the ‘NOBLESSE OBLIGE’. This cocktail is an homage to French elegance, featuring Cognac VSOP Vaudon, vodka Grey Goose, Bordeaux wine syrup, cinnamon liqueur, Sangue Morlacco liqueur, lime juice, and a dash of nutmeg. This creation encapsulates my passion for using high-quality, diverse ingredients to craft a drink that tells a story and evokes a sense of sophistication and luxury.
My journey to where I am today has been filled with dedication, hard work, and a constant desire to learn and innovate. It wasn’t an easy path. Starting in smaller bars and gradually working my way up to more prestigious establishments, I faced numerous challenges, including mastering complex techniques, understanding diverse ingredients, and developing my unique style.
One significant challenge was gaining recognition in a competitive industry. To overcome this, I focused on continuous improvement and experimentation. I attended workshops, collaborated with other renowned bartenders, and constantly sought feedback to refine my craft. Persistence and a willingness to embrace new ideas were key to overcoming these hurdles.
Throughout my career, I’ve learned the importance of resilience, adaptability, and staying true to one’s passion. Mistakes are inevitable, but they are also valuable learning opportunities. Building a successful career requires not only skill and creativity but also a deep understanding of the customer’s experience and preferences.:

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
This is a fun question because we are waiting for our best friends to come visit us from Italy and we are planning a trip with them for real! Here in Los Angeles there is a mix of iconic landmarks, cultural experiences, and culinary delights, and we really want to ensure a memorable week for our friends.
The Griffith Observatory and Griffith Park for example are perfect for breathtaking views of the city and the iconic Hollywood Sign.
The sunset at Santa Monica Pier is something unique. If you are in LA you have to enjoy a walk along the Santa Monica Pier, ride the Ferris wheel, and watch the sunset over the Pacific Ocean.
Another iconic and famous spot, used in a lot of tv series, is Venice Beach. Stroll along the Venice Boardwalk, watch the street performers, and explore the quirky shops, you can’t miss the Venice Canals for a serene walk.
If you love art you have to visit The Getty Center and explore his impressive art collections, beautiful gardens, and stunning architecture.
Downtown LA with The Broad Museum for contemporary art and the vibrant Arts District.
I want them to explore the nightlife on Sunset Boulevard, with a stop at The Comedy Store for some laughs and the
Hollywood Walk of Fame, taking a stroll down the Walk of Fame and visiting the TCL Chinese Theatre.
The Los Angeles County Museum of Art LACMA is another amazing place we want to show them.
And then it’s Shopping Time. If they can afford it (I can’t ahahahah) i will bring them to Rodeo Drive and Beverly Hills, but also The Grove is a great place, walking around in that outdoor shopping and entertainment complex.
One day it should be left for fun, so Universal Studios or Disneyland, spending the day enjoying the rides, shows, and attractions.
I will drive them along Mulholland Drive for stunning views of the city and the Hollywood Hills, taking a scenic drive.
Last but not least: relax on Malibu Beach spending the afternoon relaxing on the beach, taking in the sun and surf.

The Bungalow in Santa Monica is perfect for a relaxed atmosphere, ocean views, and great cocktails.
Bestia is a trendy, high-energy spot in the Arts District known for its Italian cuisine and industrial-chic vibe.
Musso & Frank Grill is an historic Hollywood restaurant has been serving classic American cuisine since 1919.
A brunch at the Original Pantry in Downtown is a must, of course.

If there is just a person that deserve all my gratitude for all she done for me and my company is my fiancee Ambra Ferraris, if I am here right now, growing in my career it’s just for her.
My fiancee has always been a strong influence in my life. I met her in high school and she changed my life completely. Since the beginning she has been my role model, being focused, adventurous, and corageous. We grew up together, and she helped me shape my values and step out from my comfort zone, believing in my potential and pushing me to set ambitious goals for myself.
My fiancee instilled in me the importance of hard work, integrity, and perseverance. She always encouraged me to pursue my goals with determination and to never give up, no matter the challenges. From a young age, I was taught the value of education and the importance of continuous learning. This has driven me to seek knowledge and self-improvement throughout my life.
