Meet Delaram Mirzaei | Pastry chef


We had the good fortune of connecting with Delaram Mirzaei and we’ve shared our conversation below.
Hi Delaram, what was your thought process behind starting your own business?
Starting my own business was deeply personal for me. My passion for baking began in childhood, especially during Nowruz, when I’d bake traditional Persian pastries with my grandmother. Those moments weren’t just about food—they were about connection, tradition, and joy.
Over time, I realized that there was a gap in the market, especially in Los Angeles, for high-quality, handcrafted Persian pastries. Most places either didn’t offer them or lacked authenticity and care. I wanted to create something that not only filled that gap but also honored my roots.
The decision wasn’t just about running a business—it was about preserving culture, sharing joy through food, and creating a space where people could experience something unique and heartfelt. It took a lot of planning, sacrifice, and persistence, but the vision kept me going.

Let’s talk shop? Tell us more about your career, what can you share with our community?
My career in pastry has been shaped by a deep love for tradition, creativity, and resilience. What sets me apart is my ability to blend time-honored Persian flavors with modern pastry techniques. My desserts aren’t just sweets—they’re stories, memories, and experiences wrapped in delicate layers of flavor and detail.
The journey hasn’t been easy. It’s meant long hours, missed holidays, and sacrificing celebrations. But when you pour love into your craft and see people genuinely enjoying your pastries—the smile on their faces, that moment of delight—it makes it all worth it.
One of the biggest lessons I’ve learned is that when you dedicate yourself to something you’re truly passionate about, the hard work becomes more meaningful. Passion doesn’t remove the challenges, but it makes pushing through them possible—and even joyful.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Since I live in LA, I love exploring different restaurants—especially for brunch, which is my favorite! So I’d definitely take them to a great brunch spot.
If it’s their first time visiting LA, I’d make sure to show them some iconic places like Griffith Park, Beverly Hills, and Rodeo Drive. And of course, I’d absolutely invite them to a cozy coffee and pastry shop—there’s nothing better than sharing good pastries and conversation in a beautiful spot.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I’d love to dedicate my shoutout to my grandmother. She was the heart of our kitchen growing up and the reason I fell in love with baking.
I also want to give credit to family who supported me through every doubt and late-night baking session. Starting a business isn’t easy, and their encouragement reminded me why I started in the first place. And of course, the incredible pastry chefs and mentors I’ve worked with along the way—they pushed me to grow, to lead, and to believe in my vision.
This journey is mine, but it was built on the shoulders of so many who poured into me. I’m endlessly grateful.
