We had the good fortune of connecting with Ebru Caplan and we’ve shared our conversation below.
Hi ebru, what do you think makes you most happy? Why?
I am a food creator so to create a new dishes makes me very happy. Because, to see people enjoying my creation is very fulfilling.


Alright, so for those in our community who might not be familiar with your business, can you tell us more?
When my first restaurant Bru’s Wiffle opened in late 2010, I set out to create a casual dining experience with new American offerings and familiar comfort food. One of the most satisfying parts of running a restaurant is seeing the faces of the customers when they take their first bites. Their faces light up, and it makes all the work that goes into cultivating that experience worthwhile. It hasn’t been easy, but the restaurant has weathered the pandemic and economic instability that affects the whole community. Overseeing multiple restaurant concepts and locations throughout the years has been challenging, and I try to apply the lessons from the experiences (successful and otherwise) to always improving and staying true to the original vision. We all put our hearts to make the best to make our guests happy with great food and service.
I love what I do, and I hope everyone who visits my restaurant can feel that in their dining experience. I recently combined Bru’s Wiffle and Flapjax Diner into a hybrid concept operating out of a single space, which creates an ideal venue for serving new food creations beyond just pancakes and waffles. I love creating new menu items and seeing which ones resonate with our guests.


If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
We’d start the day at the Santa Monica Farmer’s Market, then go to Bru’s Wiffle & Flapjax Diner (since there are in same space) for brunch for best waffles or pancakes with some mimosas and fresh watermelon juice. Later, we’d go for a drive around Santa Monica and the ocean. After that, we’d take a walk in Venice, Main Street, and Abbot Kinney. We’d stop by Kavahana for some delicious kava cocktails. For dinner, we’d go to one of the great restaurants on Montana Ave. The following day, we would visit Ojai and Ventura and stop by the Camarillo outlets.


Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I want to dedicate my shoutout to my dad who I lost 4 years ago. He encouraged me when I shared my business idea with him in 2010. He was my investor and mentor.
Also, my brother who is my finance advisor. He is a huge part of my business, I couldn’t do without him. I’m also supported by my husband and my team.
