We had the good fortune of connecting with Adam Moon and we’ve shared our conversation below.

Hi Adam, is there something that you feel is most responsible for your success?
Technology. Being an early adopter of third party delivery apps helped us establish our online presence and optimize our off premise workflow processes. Finding economical but functional to-go packaging, managing couriers, rapid fulfillment of orders, efficient expo practices, and tablet management are just a few of the many aspects we were able to upskill. Technology allowed us to be the first to move on virtual brands when the pandemic hit, and since we had already adopted the use of integration and aggregation software, we were able to launch over 65 virtual brands very quickly. This gave us the opportunity to continue growing during the pandemic, instead of contract. We’ve been able to leverage an AI phone tree to make our front-of-house labor more efficient, giving them time to focus on dine-in customers. We’ve also begun using dispute AI software to win back order refunds that are sometimes hastily or incorrectly administered by third party delivery platforms. In a time when labor and food costs are higher than ever, technology is what we need to rely on to succeed in an exceedingly competitive landscape.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
My business wasn’t always what it is now. It used to be a hole-in-the-wall with only one location. We didn’t do deliveries well. We didn’t do catering. We didn’t do anything spectacularly well. My mother and I had no idea what we were doing. We made mistakes every single day. Customers got upset at us. We got shut down by the health department. We learned from those mistakes and grew from the hardship. After 7 years of working with my mom, I was able to retire her early. 8 years later, the revenue at that primary location has quadrupled, and now we have 4 more locations. The quality that I know carried me through the years was never giving up, taking risks, embracing technology, and being easy to work with. You’ve probably heard all of those things before, but the last one is one of the most important. Being easy to work with is much harder than you think and more valuable than you know. It requires listening, being open to learning, being humble, knowing when you’re not right and not the best, knowing you can improve, knowing you need others to help you if you want to achieve more.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
The perfect week in LA would require seeing the mountains, the desert, the beach, and Vegas (I know this isn’t part of LA but as an Angeleno, going to LA for a quick trip is part of the LA experience). The day in the mountains would entail snowboarding at Big Bear or Mammoth. Stopping for an IPA halfway down the slope. A day in the desert would be an Airbnb out in Yucca Valley made from a shipping container. Visiting Pioneertown and getting bbq at Pappy & Harriet’s. Seeing the stars at night while soaking in a cowboy tub. Beach day would be going to Dana Point. Stopping by Kawamata Poke and then eating it on the beach while looking out at the ocean blue. Vegas would be a quick 40 minute flight. Staying on the strip at Aria. Getting dinner at Din Tai Fung. Heading out to Omnia or Zouk. Finishing with some late night room service. Dreading the morning hangover and the flight back to LAX – especially the Uber line. The week would have to end with a visit to Koreatown and getting Korean bbq at Quarters. Going to Staples for a Lakers game. Getting tacos at El Chato or calamari at Mario’s Peruvian.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I’d like to shout out the amazing women in my life who keep me grounded, support me when I’m not at my best, advise me when I can’t see the right path, and love me for my flaws. These women are my wife, my mother, and my sister. I’d be nothing without them. I’d also like to shoutout my identical twin sons, who’ve given me all the reason in the world to achieve the most every single day. Lastly, I’d like to shout out my amazing team. Without my team, the business wouldn’t move an inch. I have two cousins on my team who take care of operations and give me the confidence to focus on growth and innovation. Every individual on my team has a job that they do better than anyone else. Every one of them is special and crucial to our business.
