We had the good fortune of connecting with Alex Hyman and we’ve shared our conversation below.

Hi Alex, can you tell us more about your background and the role it’s played in shaping who you are today?
Growing up in Los Angeles, surrounded by so many different cultures and cuisines, my interest in food sparked from a young age. At 15, I was fortunate to land an internship at Kali, a Michelin-starred restaurant, where I learned the precision, discipline, and care that goes into high-level hospitality.

After finishing my first year of college, I spent the summer working on my friend’s food truck, Sunset Smash. That experience opened my eyes to another side of the industry—one that was more casual, fast-paced, and rooted in community. It showed me how fulfilling it could be to serve food that’s creative and high-quality, yet affordable and accessible to more people, including my own friends.

Having worked on both ends of the spectrum—from fine dining to fast casual—I was inspired to combine those experiences and open my own food truck, CHX Sandwiches. My goal is to bring the same level of care and originality I learned at Kali to something simple, fun, and approachable. These experiences have taught me that great food doesn’t have to be exclusive, and that lesson continues to guide me every day.

What should our readers know about your business?
CHX Sandwiches is a fried chicken sandwich food truck based in Los Angeles, created with the goal of bringing bold flavors and consistent quality to a casual, accessible setting. After spending time in both fine dining and fast-casual kitchens—including a weekend and summer job for over two years at the Michelin-starred Kali and a summer on the Sunset Smash food truck—I saw an opportunity to combine the best of both worlds: food that is crafted with care but served in a way that feels fun, inclusive, and approachable.

Starting CHX wasn’t easy—I’m still a full-time college student, and launching the truck involved everything from sourcing ingredients and building a menu to navigating permits and figuring out marketing from the ground up. But that challenge has been part of the joy. I’m proud that everything we serve is designed with intention, and that we’ve already built a small but growing following that appreciates both our food and our vibe.

What sets CHX apart is the belief that elevated food doesn’t have to come with a high price or a formal setting. Whether someone’s grabbing lunch or stopping by for dinner with friends, I want CHX to feel like a place where people know they’ll be taken care of and served something memorable. I’m excited to keep growing the brand and building a business that reflects both where I’ve come from and what I believe food should be about—flavor, care, and community.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
If my best friend was visiting for the weekend, I’d give them a real taste of LA—starting with tacos at Tacos Los Poblanos #1 Estilo Tijuana in East LA, right by the commissary where the CHX truck sleeps at night. Afterward, we’d take an evening drive across the city to grab ice cream at Sweet Rose Creamery.

Saturday would start with delicious breakfast tacos from Gracias Señor, followed by a relaxing hike at Kenter Canyon. For lunch, we’d warm up with a bowl of pho from Blossom Vietnamese in Santa Monica, then head to Koast in Hollywood for dinner—a refined spot founded by the team behind Kali Restaurant.

Sunday would be a more laid-back day. If CHX Sandwiches is open, we’d stop by so they can finally try one of our fried chicken sandwiches—and if Sunset Smash is open next door, we’d split a burger, too. Nothing extravagant, just great food to wrap up a fun weekend.

Who else deserves some credit and recognition?
I’d like to give a huge shoutout to Kevin Meehan, the chef and owner of Kali Restaurant. I interned at Kali when I was just 15, and Kevin took a chance on me at a time when I had little experience but a lot of curiosity. More than just teaching me technical skills, he showed me what it means to hold yourself and your work to a high standard, to move with integrity in the kitchen, and to treat food as a form of expression. I’m incredibly grateful for the time, care, and guidance he offered me so early on, and I carry those lessons with me every day.
