We had the good fortune of connecting with Clay cassis and we’ve shared our conversation below.

Hi Clay, what’s the end goal, career-wise?
the end goal for us is to have a fully flourished restaurant where the team and the guests can both be happy and confident that they were a part of something special and hopefully a real connection, whether that feeling came from the plate in front of them or someone who they interacted with throughout the stay at Il Fiore.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
I think for any creative chef there is always a struggle of how to create a great dish, some may constitute a great dish as something that tastes delicious above all else, some might say it has to be totally new and original, all organic, responsibly sourced, look beautiful, ect.

for us those things are very important as well, but what may be the most important thing right now is understanding the food we are creating, which is why it is important that we grow what we can so that we are able to learn about these ingredients and gain a deeper understanding of their roll in a dish, the foraging is also extremely important to us, the fermenting, the bread making, the pasta making, everything. when we are able to fully realize something as special as a plate of food that went through these processes and then we can find a way to give that to someone and hear about how they interpreted, it is a very special moment.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
my perfect day with a friend from out of town would start with us going foraging in the morning, depending on the season we might be able to find some good fruits to then take to forest lawn where we would picnic, but not before picking up some takeout from pine and crane, and we would probably end our night with dinner at Bavel and running around the arts district. easy day

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
that is an easy one for me, without hesitation my answer is Joel Stovall, he is the reason I am here and he is also my partner and equal on this project, we are constantly inspired by each other, learning from each other, and pushing each other, and still manage to have a good time on the line every single night!
