We had the good fortune of connecting with David (Chef De’Jaes) Jones and we’ve shared our conversation below.
Hi David (Chef De’Jaes), what was your thought process behind starting your own business?
After retiring from the world’s greatest Navy after 20 years of service, I did several different job as I was trying to search for what was best for me. I finally decided to leave corporate America pursue my career in the culinary arts. I attended and graduated from Le Cordon Bleu, Dallas, TX. In doing so, it was not my plan to work for someone in a restaurant for the rest of my life, I wanted to own my own business. It was a leap that most are not willing to take but my parachute always opens.
Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
I now live in Playa Del Carmen, Quintana Roo, Mexico. I am fully retired at the age of 51, but I do perform some personal chef work at customer’s customer’s homes. Getting here required a lot of sacrifice some I wasn’t willing to make but I did.
What I learned along the way, is to find your place of peace and don’t let anyone disturb that!

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Food, food, food and more food. Sunday brunch at the Thompson Hotel with a 180ﾟ view of the ocean of the Caribbean. The four course brunch and bottomless mimosas are everything. Mondays is Harry’s Steakhouse for the best steaks and cheesecake in Playa Del Carmen in my opinion. Tuesday it’s Po Thai restaurant for the best curry lamb chops. Wednesday it’s Sonora Grill for drinks and popcorn shrimp at one of the classiest restaurants in town. Thursday it’s Rack Smokehouse for some mouth watering BBQ! Friday is Karen’s Restaurant on 5th Avenue for some live Cuban Salsa and great local foods! Saturday it’s El Forgón for some awesome tacos!!
Xcaret Park will be by far will be the most interesting cultural experience in the Rivera Maya to visit! You won’t regret it!
Who else deserves some credit and recognition?
Absolutely!! I first want to shout out to my long time friend Regina Broussard-Sabbath. It was Christmas Eve 2015, and I was visiting with Regina telling her how I left Corporate America and decided I wanted to pursue my MBA. It was at that moment that she brought to my attention that as much as I cook, that I should probably pursue a career in the culinary arts. I immediately grabbed my phone, looked up Le Cordon Bleu Dallas, express my interest and by the following Monday I was enrolled. The rest of history! It is because the seed that she planted I am where I am in the culinary field today.
Next I would like to send a shout out to Minh Nguyen! He’s the director of the new movie ‘Mind Talker’ that is coming out mid August 2021. He reached out to me through a mutual friend and offered me the role as Pastor Stephens in his new movie. All I can say is wow! To him I will be forever grateful for my first active speaking role in a motion picture movie!!!
