We had the good fortune of connecting with Justin and Johanna Snyder and we’ve shared our conversation below.
Hi Justin and Johanna, what was your thought process behind starting your own business?
The thought process behind “Baby’s Marché” was to not only bring a touch of European culture and cuisine to the Coachella Valley, but to re-instate values within the restaurant industry. Since we are a Husband and Wife team we wanted to reinvent the stigma of what a restaurant should be. Chef Justin Snyder spent 10 years of his career working in some of the most demanding restaurant imaginable, while sacrificing holidays, weekends, family time, special events etc… But taking on this new project we wanted to not only reward ourselves with these holidays and deserved time off but also offer our employees the same options. Our first location of Baby’s Marché is just the foundation of future projects in where we can help not only shape our projects but hopefully display a model other current and future food and beverage concepts can follow. With this being said we still wanted to pride ourselves with using top grade ingredients while creating new but relatable menu items. We pride ourselves with following a standard in our establishments such as no seed oils, top grade ingredients, and having core values for everyone involved.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Baby’s Marché is more than just a specialty cafe and market but a dream come true. This all started with an idea in 2018 and it took multiple trips to Europe for us to start moving the dream into reality. We wanted to create a restaurant that was a fast casual concept that defied the current standards for this genre. We wanted our place to be welcoming to everyone and to have minimal dining interaction for our guest. But with that being said we still use top of the line ingredients in all of our menu items but offer all of our food in eco-friendly to go containers. We wanted to re-create value not just by portion size but for quality and craftsmanship. But we also offer much more than just a place to go grab a quick bite, we also offer a butcher section where we offer top of the line wagyu beef both domestic and imported. Also there is a small grocery section that offers specialty ingredients and house made goods. We want to be known as a family brand that our customers can purchase more that just food. As we grow so does our product line

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
This is what our days would consist of
First stop would be Varraco Coffee co to grab coffee, Then over the course of the next couple of days I would
-rent e-bikes and ride around down town palm springs
-Visit the Tram and go up the mountain
-Go hiking in Joshua Tree National Park
-Take the jeep tour of the desert
-I would also drive out to the salton sea

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Looking back there are so many factors that played into the creation of Baby’s Marché. But we would love to actually shoutout our community. We are very blessed to been accepted so rapidly in the Coachella Valley. Our Family, Employee’s, Customers, and Suppliers are our inspiration to continue to strive for perfection everyday, and we are so grateful for everyone involved. There are so many factors that lead into the success of our current project that honestly would not be possible without any of them.
