We had the good fortune of connecting with Kevin Williams and we’ve shared our conversation below.

Hi Kevin, what is the most important factor behind your success?
Raw Authenticity!

Its important for myself to embrace all success that comes my way because of the loyalty to culture. Young adults (my age upon the Company’s establishing) are constantly growing, maturing, and traversing in the world of social acceptance. I honeslty believe that being yourself is the easier said, yet toughest task for a entrepreneur. You have to see the world buying into YOU, before you introduce your product. There were many people making chicken wings before myself, and of course many will emerge during our spotlight, but there will always be something a bit different about the level of intent, passion and mission I originally set out to accomplish with my brand.

I’m not shy at voicing how good we are!; how much SWAG is dripping off our style, and how its a vastly superior level of confidence that comes out of my kitchen. Its a humbled yet convinced level of confidence that gets admired. To change perception of a customer from what they thought was a good food, to enhancing the experience to them now knowing something better exists from they past food choice options. No one can take that from me, and i whole-heartedly believe we can make the customer notice.

We take on challenges! From Chicken Sandwiches, Wings, Strips, and many unique kitchen creations, to internally growing sales, hiring qualified and dedicated cooks, and maintaining a family like customer service level.

Staying true to that is hard to do, but we can. Our authentic culture is what we hang our hat on.

Let’s talk shop? Tell us more about your career, what can you share with our community?
I started this company in 2014 as a hobby. I made wings for my family only and would get vague compliments from family members, and if your family is as competitive as mine over recipes and cooking styles, you know even a jaded-like compliment meant you were doing excellent. I started with a table top electric deep fryer and a 3k generator to power it. We did small farmers markets, until we landed big commercial festivals, we began to get key events and huge festivals to solidify our brand. We earned our way to be selected as the last of four artisan merchant kitchens inside of The Cookhouse @ Vail HQ.

Our first year of business storefront was so slow. To even make it tougher it was June 2019, we have no incline and then March 2020 came and brought a global pandemic, forcing potential business to.be on lock down in their homes. I’d be lying to say i wasnt nervous, but the mission remained the same. I stayed late and came in early Risking my own safety, to ensure the welfare of my family.

Not only did we make it through, but the incline was epic. It felt like we were finally being accepted, becuase we were staying true to our mission. We did everything we could to keep our doors open and lights on during the worst months, and gained a tremendous amount of market share.

I would love the world to know i stayed open not for pride, but i stayed open because i will one day tell my children that sometimes a parent has to jump hurdles and with thier child in their arms, covering the face of the child, because family is everything and only what you protect. I would risk my health and safety, just so they would have the advantage to better health and safety.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Best friend is in the area, got to take them to see and enjoy the vineyards, the open rural parts of Temecula on day 1. Rich soil, and parks of Ever flowing water fountains. Day 2 would consist the most popular eateries in the city. Whats top 10, whats the best hole in the wall restaurant, etc. Day 3 through 6 is lounging, carching up, enjoying and basking in the sun rays, and conversations completely about how they must return with more days available to stay. Our last day we are Eating at my Restaurant, at this point im showing off! Im going to feed them our best selections, and send them off with TO-GO bags for two or three days after the visit. I want to make sure they let whomever is at there return destination gets a sample of how gold we are.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
My Mother, My core group of friends, and the Late Great Musician and Mogul Nipsey Hussle.

My Mother (A Radiant Queen who served in the United States Army) is a driving force in why i do things for personal enhancment without the need of recognition. Sometimes single parents are facing the biggest hurdles of life, yet they try thier best to still make those hurdles while covering thier childs face and assuring the child that “nothing is wrong”. That’s moreso a metaphor for how a parent sacrifices there own progress, to ensure the childs advantage for the same if not better opportunity.

My Core Solid “Day 1’s” Friends, keep me humble, grounded and abreast to true opinions and perception of different viewpoints. We argue, we joke, we encourage, and support one another on our individual goals.

Nipsey! Proving that being yourself is worth more than any deal you will ever sign. He is a definition of what “buying the block back” means. Taking povert conditions and turning them into the wildest financially free dreams, all will accepting that people will have to accept him.
