Hi Madalyn, is there something that you feel is most responsible for your success?
In my experience, the most critical factor behind my success in running a restaurant is undoubtedly the people—both our valued customers and my dedicated team. Customers are the lifeblood of our business, driving revenue and creating a vibrant atmosphere. Equally important if not the most important are my team members, who are the backbone of our operations. Just like a beehive, each person plays a vital role in ensuring smooth and successful service. I prioritize empowering and leveraging their strengths, allowing them to shine in their respective roles. By fostering a supportive environment where everyone can thrive.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Wally’s Desert Turtle is not just a business but a cherished family legacy. Founded by my grandfather, Wally Botello, who brought his vision from the renowned Velvet Turtle chain to the Coachella Valley, we’ve remained committed to delivering an unparalleled dining experience steeped in sophistication and hospitality. What sets us apart is our deep-rooted history and dedication to preserving his legacy while evolving with the times.

Taking the reins as the third-generation leader, I’m incredibly proud of how we continue to captivate guests with our timeless ambiance and exquisite cuisine. The meticulous design by Steven Chase, which still graces our dining rooms, reflects our commitment to creating an atmosphere of elegance and warmth. Every detail, from our menu to the attentive service provided by our dedicated team, is aimed at ensuring each visit is unforgettable.

Our journey hasn’t been without challenges. Upholding the high standards set by my grandfather and navigating the complexities of the hospitality industry have been demanding yet rewarding. Overcoming these obstacles has taught me the importance of resilience and the value of maintaining authenticity in everything we do.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I’ve been fortunate to have had many mentors and influences throughout my journey, each playing a crucial role in shaping who I am today. Firstly, my family has been my rock and foundation, instilling in me the values of hard work, hospitality, and dedication to excellence from an early age. Their unwavering support has been invaluable.

During my time at the Four Seasons, I had the privilege of learning from some of the best in the hospitality industry. My training and the guidance of my bosses there taught me the importance of impeccable service, attention to detail, and the art of creating memorable guest experiences. These experiences have been instrumental in shaping my approach to leadership and hospitality at Wally’s Desert Turtle.

Additionally, every job I’ve held has contributed to my growth and development. Each role has provided unique challenges and opportunities to learn, refine my skills, and understand different aspects of running a successful restaurant.

In terms of literature, two books that have profoundly influenced my perspective are ‘The Culture Code’ and ‘Unreasonable Hospitality.’ These books have not only expanded my understanding of organizational culture and customer service but have also inspired me to continuously strive for excellence and innovation in everything we do at Wally’s Desert Turtle.
