We had the good fortune of connecting with Max Boonthanakit and we’ve shared our conversation below.

Hi Max, what inspires you?
I’m really inspired by truthful reactions. I love to make foods that get instant reactions from people. The ones where they don’t have to think. Like when both eyebrows shoot up.

Alright, so let’s move onto what keeps you busy professionally?
I’m currently the Executive Pastry Chef at Blue by Alain Ducasse in Bangok, Thailand and also the Founder and Co-owner of Boon Sauce. I started cooking when I was 13 and loved it ever since. Pretty much food has dictated everything I’ve done.
I went into debt just to eat and work at some of the best restaurants in the world in order to train my palette and skills. Worked long hours and endured a lot. However, if you compare it to a lot of other careers out there, I didn”t have it as bad.
I think the biggest lesson I learned was to be as uncomfortable as you can in the beginning. Fight the laziness and just do things. You have to think about your job 25/7 if you want to come out ahead.
I want people to know that we are 100% committed to flavor at Boon and my whole cooking career has given me the knowledge and tools to achieve it.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
breakfast at Gjusta or Republique lunch at Mariscos Jaliscos or Kazunori
dinner at Angler or somewhere in koreatown

we’re extreme homebodies… we just leave the house to eat..

My wife Wendi Ogata who is also a co=owner of Boon. To both our families for helping us when stuff really got crazy!
