We had the good fortune of connecting with Patris Kirakosian and we’ve shared our conversation below.
Hi Patris, let’s talk legacy – what do you want yours to be?
I want my legacy to be one of the best Armenian chefs there has ever been ! . I have been in the industry for about 9 years now and being such a young age , I still have a lot of time to reach my goal . I want people to remember me as an amazing chef and to always put a smile on other peoples faces .
What should our readers know about your business?
The One thing I am proud about is that me and my partner sako have came up with the amazing idea of bringing the carnival too you ! . With Down to fry , we have achieved that by serving amazing fair/carnival food such as dirty street dogs, loaded fries , our own twist on funnel cakes and churros and the amazing Dippin dots ice cream ! I have got to where I am today by working my way from a prep cook to going to culinary school and working my way up as corporate chef for Walt Disney studios . I am proud of what I have become and everyone who has been there to help me throughout the way . I have learned many lessons in the restaurant industry such as do not ever take anything lightly because it is one of the hardest professions to accomplish and do great in . There is a lot of competition and you need to be 100% to get somewhere in life . We are exited for launching DOWN TO FRY (DTF) in Burbank ca and we are trying to make it as huge as it can be.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If a friend was visiting me , I would take them to an amazing deli called Langers in Los Angeles ca . For drinks , there is a amazing spot in Glendale ca called Mr Furleys that has an amazing atmosphere with bunch of games and amazing drinks . The one thing I love in life and enjoy is hockey ! . I would Foresure take them to a LA Kings game at staples center in Downtown La because it is always a fun environment to be in and it makes me happy .
Who else deserves some credit and recognition?
I think the biggest factor to me in my culinary journey has been my grandma . Ever since I was a little boy , I would always love to go to her house and see what she’s making and always learn the traditional Armenian cuisine . I have also had a lot of help from both my parents and my amazing fiancé for always being there for me and making sure I achieve the best in what I do . I have worked for many greats like vartan abgarian of 71 above and Dominique Ansel of 189 by Dominique Ansel . They have taught me a lot throughout my fine dining experience after culinary school .
