Meet Ron Salisbury | Restaurateur/Owner/Grandson of Founders, El Cholo Restaurants

We had the good fortune of connecting with Ron Salisbury and we’ve shared our conversation below.
Hi Ron, what do you attribute your success to?
I pride myself on paying obsessive attention to all details. I think it’s also very important to love deeply what you do. I’m passionate about what I do and always adhere to the highest quality of every aspect of our restaurants – the food, the staff, the ambiance, and the entire experience for our guests. Fortunately, I was able to start my professional career with El Cholo – a brand that represented all three of those qualities.


Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
Well, it’s never easy. I inherited a wonderful brand from my entrepreneurial parents and grandparents, and today, the El Cholo brand stands 100 years strong. I paid constant deep dedication to the brand and doing all I could to possibly improve it over the years. I never lost focus of respecting the brand and doing everything possible I could think of to grow it.
Personally, what I am most excited about is that I believe in my heart that my parents and my grandparents would be proud of me. Looking back over all the years that I’ve been working with the El Cholo brand, I believe we have sincerely touched the many hundreds of thousands of people who have been our guests since 1923. I’m also very proud of my wonderful biological family – my seven children, 18 grandchildren and six great-grandchildren, as well as the dozens of members of my work family who are employed at our six El Cholo restaurants across Southern California.
I’ve learned thousands of things! Each, one at a time. Every day has been a learning experience for me – which hopefully ended up in older age wisdom. I also learned that owning and operating the El Cholo family of restaurants wasn’t about me. It was about all the people that we employ who truly work together as a dedicated team. Each and every one of them cares deeply about being the best they can be, providing our customers from across California and around the world the best possible dining experience.


If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I would like to bring that friend to any one of our eight restaurants – our six El Cholo’s, as well as our two wonderful venues in Newport Beach – The Cannery and Louie’s By The Bay. At any of those restaurants, we could experience a warm, embracing atmosphere and enjoy the company of a great friend. I also love watching great concerts at the Greek Theater – another place I’d take that visitor.


Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
My parents, George and Aurelia Salisbury, certainly deserve credit and recognition for my story. They opened the second-ever El Cholo restaurant on Western Ave. in 1927 and we’ve been on that street ever since. I think about my parents every day – every single time I enter the front door at our Western Ave. venue. I wish they were still with me today. The thousands of simple things that they taught me turned out to be so very important throughout the course of my entire life. They truly understood the world.
