We had the good fortune of connecting with Walther Adrianzen and we’ve shared our conversation below.

Hi Walther, what do you want people to remember about you?
Growing up, I would watch my dad cook with so much joy and love that it ultimately sparked my passion for cooking. Though he is no longer with us, me and everyone who knew him remembers how happy he was to cook for others. Similarly, that is what I want to be remembered for, creating dishes with love and passion for family, friends, and all who I have had the pleasure of cooking for. I would love to make my mark here in Los Angeles as one of the best chefs in Peruvian gastronomy. I want my legacy to be remembered as someone who was constantly creating, experimenting, and pushing the boundaries of Peruvian cuisine with new dishes, without losing my Peruvian roots and foundation.

Alright, so let’s move onto what keeps you busy professionally?
Becoming a chef wasn’t easy. It is a very tough career, especially back in the day. But I knew what I wanted to become and where I wanted to be so making sacrifices was necessary in order for me to get to my dreams. I remember working in places for FREE just so I could learn different techniques, learn different types of cuisines or just to learn from a particular chef. Many people told me I couldn’t do it and when I was 17 or 18 years old, *I would look at them all big.* that pushed me to keep going and motivated me to be better everyday. I tell my young chefs the same, “ Don”t think about the money because that will come, focus on growing your knowledge, get better and better and believe me when you are ready you will be worth more than you can imagine, then money will come”

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If my friend would come visit I would take him to eat and drink to my favorite spots. We would hit all the San Gabriel valley restaurants for food and go to Chulita on Venice to get drinks. We would then do the usual Santa Monica pier, 3rd street promenade, Hollywood and maybe a little bit of Rodeo drive. I want to dedicate my shoutout to my Peruvian community, to My family , My kids Michael, Mathias ,Fabio, Emma, Daniel , My wife Diana who is always walking beside me, holding my hand. She is the eyes behind my head, the support I need when things get tough. she’s always working hard by my side making sure our projects are always a success. My whole Restaurant team, to all the people that’s helping me accomplish THE DREAM, My dream . They know who they are 🙂
