We had the good fortune of connecting with Jairred Lambert and we’ve shared our conversation below.
Hi Jairred, can you walk us through the thought-process of starting your business?
Life provided a bit of a perfect storm: I was unable to continue working in restaurants (I have a degree in Culinary Arts from Le Cordon Bleu and 15 years experience working toward my dream of opening my own restaurant); I was diagnosed with Lyme Disease and continue to have chronic symptoms; and I saw a glaring market opportunity in seasonings.
Making seasonings has allowed me to continue working with my passion – food – and also provide an exceptional experience to everyone by using my knowledge and expertise to craft wonderfully flavored spice blends.
I hope to encourage more people to cook at home, for themselves, for friends, for family, by making it easier to create memorable meals!


Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
No Name Spice Co. arose out of frustration. I noticed two huge problems: most seasonings on the market taste all too similar to one another; and many of them are unbalanced, usually being way too salty. It’s as if some companies forgot to actually use their seasoning for cooking and taste the food!
We make unique seasoning blends that are well balanced and holistic, meaning that all you have to do is shake it out of the jar. No need to add this or that, and no need to be afraid to season liberally. I really feel so many people are “seasoning shy” because of the inferior products that are in the main stream. I use my professional kitchen experience as a mind set for spice blend flavor composition, because if I can make it easier for people to make tasty food, then hopefully they will cook more.
Many brands use inferior flavors or load up on inexpensive ingredients like salt. We don’t use any fake flavorings or oils, no fillers, preservatives or anti caking agents – just things that you can pronounce and you can taste! Every ingredient is intentional. We make everything by hand in super small batches. It’s a true labor of love, we like to say our seasonings are “Crafted by hand, and created with heart”.


Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
ABSOLUTELY we’d have to visit the Downtown San Luis Obispo Farmer’s Market on Thursday evenings, it’s known nation wide as a must see market! A day in Cayucos (most of which being spent on the beach) is also a requisite. A day meandering around Paso Robles (quaint and unique downtown with great shops, excellent Olive Oil producers, amazing wineries, fantastic distilleries) capped off with a dinner at Six Test Kitchen. I’d, of course, have to toot my own horn a bit and insist on cooking a wonderful meal or two. A hike out in Montana de Oro would also have to be on the itinerary. It really is hard to narrow it down, you truly need more than a week to experience the unparalleled breadth and beauty of the Central Coast, and you can’t really go wrong discovering any part of it.


Who else deserves some credit and recognition?
I’d be remiss if I didn’t give my appreciation to our amazing customers, the local communities, the local craft fair show-runners and managers, the managers, staff and fellow vendors at the farmers markets, and of course my family and friends!
To our customers and communities: Thank you so much for your continued support and encouragement, it sounds cliche but we truly could not do this without you!
To all the craft fair and farmer’s market people: It’s thanks to amazing people like you, with your relentless hard work, dedication, and behind the scenes perspiration, that we were even able to begin a company in the first place. You are the reason we are able to share incredible flavor with more and more people every single day!
To my friends and family: Well, thank you obviously! You all know who you are, and you have all been a huge support in going above and beyond with zero expectation or caveats, and absolutely no recompense whatsoever (though I do suspect I’ve provided some payment in the form of delicious food, haha!)
