We had the good fortune of connecting with April Gillespie and we’ve shared our conversation below.
Hi April, is there a quote or affirmation that’s meaningful to you?
“The best times usually come after saying EFF it, let’s do it! Edna Vees Public House was on paper for eight years before we decided to pull the plug and go for it. We spent many years doing “research” to know exactly what we wanted. By “research” we mean going out to other establishments and taking part in the spirits. Most of our ideas came from a great deal of spirits and deciding to move forward. This quote was our motivation throughout the process that took place to get our doors opened. There were so many times that we didn’t know if we were going to be able to open and even had to push the opening back by a couple of months. It was a scary time for us both as we were both leaving well-paying corporate jobs. What we like about it is it’s rawness of risk. Being an entrepreneur, especially in California is ALL RISK. We are so grateful that we said “EFF it, let’s do it!”
Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Edna Vees Public House is a place that you don’t just eat and leave, you stay and play. We have created an environment that feels like you belong. With our two garage doors that open to the patio we provide a very open space that makes you feel like you’re at the beach. Our range of entertainment includes solo artists during Taco Tuesday, Karaoke, live bands on the weekends and our favorite DJ during Sunday Brunch. We are most proud of the acceptance we received from the Community of Covina. This is community and they believe in supporting small business. The welcome we received was pleasantly overwhelming. We continue to grow our Regulars, which we call our #gnomies (did we mention we have a gnome theme?) and our Founders. This was not an easy process to get our doors open. There were many challenges set before us. We have never built a restaurant from the start. We had so much to learn. Fortunately, we are a great team and we becameWE aware of our strengths and weaknesses very fast. What we really would like everyone to know about Edna Vees Public House is that this is a place to feel safe, where you can always find someone you know, and a place where you will meet similar friendly people. We are BIG on community. We have donated and become a big part of supporting our local Domestic Violence Shelter and hold many fundraisers for all organizations. We want to always be able to give back.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Well, we don’t get out much due to always being at the Public House. Here it goes (base location, Covina): _ Sunday – Sunday Brunch at Edna Vees. Must get there early to get a seat. DJ E-Bert starts at 11am! _ Monday – Rest in the morning as the party from Edna Vees went into the night as they have afternoon bands from 4-7pm. Once we are recovered drive over to Claremont to have Tapas and great Sangria at Viva Madrid – Tuesday – spend the day touring Santa Monica or Venice Beach. Either place is entertaining on it’s own – Wednesday – catch a sporting event, assuming they are back to attend – Thursday – Have a sturdy breakfast at Lisa’s Cafe in Covina, go home and rest and then get an Uber to be first in line for Tiki Ti on Sunset Blvd in Los Angeles. – Friday – Loved their time at Edna Vees on Sunday so suggest they go back for delicious calamari, burgers, and mac n’ cheese. Stay for the live band that starts at 8pm. – Saturday – Pool day (it’s summer)

We would like to do a shout-out to our Village of Family and Friends, specifically: Chad & Elena Bernhardt Rhoni Ortega Lisa Procter Linda Gillespie Grayson Suchanek Jim Walsh Debbie Walsh We would not have been able to open the doors without the above mentioned. They believed in our dream and are an intricate part of that becoming possible.
