We had the good fortune of connecting with Herve Levy, CCM and we’ve shared our conversation below.
Hi Herve, can you tell us about an important risk you took in life?
Twenty years ago, I was a waiter at a four star Hotel on the beach in Del Mar, a city located in the San Diego County. I was well compensated, earning anywhere from $150-$500/ night in tips plus $7.50 per hour. One day, my manager pulled me aside and offered me the Restaurant Supervisor position. Obviously, that was a step up professionally from where I was, opening a door to more later. Unfortunately, the compensation was only $10/ hour, NO TIPS.
After a few sleepless nights, I met with my manager to accept the position. It was very challenging to pay my rent, bills and overall expenses but after only 6 months, I was promoted to Restaurant Manager, Then Director of Outlets two years later. Today I am the General Manager/ COO of a Country Club where I am managing more than 100 people. That risk brought me where I am today.
Alright, so let’s move onto what keeps you busy professionally?
Growing up in the culinary world in France, I have witnessed Chefs yelling at me, throwing “stuff” at me. So when I moved and grew to the US, I promised myself that I would not treat my staff like that. Being honest and genuine is the only way to manage my team in my opinion. Everyone has a different management style but as long as your crew knows that you are genuine, you want them to succeed and you are there for them, you will earn their trust. You have to put them first, and they have to know why they are doing what they are doing. They have to be part of the solution and know the ultimate goal. This is one of my biggest priority and that keeps me busy every day!
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I would give them a tour of the city and would show them various landmarks ( Santa Monica Pier, Venice Beach, Hollywood and Griffith Park). But if my best friend Stephan would come here from France , I would spend quality time with him over food and drinks: either Downtown LA or West Hollywood; where all my favorite restaurants are located. To name a few: Perch, 71 above, Laurel Hardware, Pump and La Paella.
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Steve DeRose, CCM, Craig Sloane, CCM, Graham Culp and Kris Thabit. They all taught me so much about member politics, smart financial decisions and overall Club leadership. I learned so much because of their guidance, leadership and trust.
