We had the good fortune of connecting with Amy Connors and we’ve shared our conversation below.
Hi Amy, what’s the most important lesson your business/career has taught you?
We’re meant to move out of our comfort zones, that’s where the most interesting and fulfilling work lies.


Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
I’m a reluctant entrepreneur. I’m most proud of myself for facing my biggest fears and anxieties to follow my curiosity. In the process, I’ve created a business that’s unique to me. When I first took a break from my full-time job as a content designer, it was to spend 6 months working at a commercial bakery, something I’d always wanted to do.
The path from there to where I am today hasn’t been linear. But sometimes the only way to figure out which path you want to be on is to rule out all the ones that aren’t meant for you.
As Quail Street and my goals evolved, I’ve stayed true to myself. My current mission is to help everyone love the pizza they make with a bake-at-home pizza dough that’s better than anything else out there. Others will often try to put me into a category that makes sense to them (like frozen pizza), and sometimes I wonder if I should go for a more conventional path (like opening a brick and mortar). But the truth is, I really love doing something I don’t see others doing. Quail Street can’t be replicated by anyone else because it’s the result of my own personal journey to discover purpose, meaning, and community after I moved from New York to Utah.


Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
My perfect weeklong trip would be during our exceptionally long winter (November – April) to enjoy Utah’s world-famous snow. Before hitting the slopes, I’ll grab breakfast from Fresh Donut and Deli. After working up an appetite as epic as snow day pow, I usually head straight to One More Noodle, Pho 33, or Pho Saigon for a warm bowl to fill me up. If I’m in the mood to unwind after that, Water Witch and The Green Room are currently my favorite spots for a quick drink before a good night’s sleep. If the day calls for sticking closer to home, I’ll cozy up with a good book and a warm coffee at Loki or Picnic.


The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My partner Jonathan deserves credit as the earliest investor in my business Quail Street. When all I had was a dream to quit my full time job and do something more creative, he didn’t let me give up. I also owe a huge thank you to Viet Pham and Alexis Furkioti Pham of Pretty Bird Hot Chicken for encouraging me stay the course.
