We had the good fortune of connecting with Brandon Gray and we’ve shared our conversation below.

Hi Brandon, what was your thought process behind starting your own business?
It started off as a joke. A friend of mine asked me if I knew how to make deep dish pizza, I said yes (after lying and saying I have made them before). I went to brag to my best friend about the new commissioned job and she asked for a pizza as well. Within 5 minutes I asked”is this going to be a thing”, she said “yeah I think it should”, and minutes later we had the name of the new business.

Let’s talk shop? Tell us more about your career, what can you share with our community?
What separates my business from other pizza joints are. I have taken my 16 years of cooking, mostly in fine dining restaurants working for some of the best chefs in the world and applying what I learned there and putting it on a pizza. Each pizza is “high touch” meaning its more than just cheese and meat. Theres infused oils, micro herbs, different cutting techniques, charring and pickling ingredients, and ultimately using 98% of the produce from the Santa Monica Farmers Market. I call it “if fine dining met pizza then that’s Brandoni Pepperoni.

Any great local spots you’d like to shoutout?
First place I would take them to is the Grand Central Market eat a little something at each place Go on a bike ride Drive out to The San Gabriel Valley and go on a food crawl Save room for tacos later. Wake up and repeat for the duration of the trip. One could always sneak a hike in the mix, maybe go to the Santa Monica Farmers Market on Wednesday(my ritual), and prepare a dinner with the ingredients foraged. Listen to vinyls and relax, as there hasn’t been a lot of time for that lately(all good things to be thankful for)

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
All of the restaurants I worked at along the years US NAVY Providence Trois Mec The Royal Mail Hotel -Australia My mother. Without her I would not have the drive that I have.
