We had the good fortune of connecting with Joe Fondarella and we’ve shared our conversation below.

Hi Joe, how has your background shaped the person you are today?
I’m from Southern California, but my family is originally from New York—loud, passionate, and rooted in old-school Italian values. Food was always at the center of everything. Sunday dinners were sacred—homemade pasta, sauce simmering all day, and stories flying across the table. When my family moved west, we brought that East Coast grit and tradition with us. After my Nanny Stella passed, I took over those family meals, and something shifted. It became my responsibility, and eventually, my calling. I worked in kitchens, pushed through the grind, and over time, I realized this wasn’t just something I did—it was who I was. That’s why I branded a chef’s knife into my arm—to make a promise to myself that I’d never quit on this path. That’s how The Branded Chef was born: from tradition, pain, and a relentless drive to turn legacy into something of my own.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
My art is food—but not just for sustenance. For me, it’s about storytelling, emotion, and connection. The Branded Chef is rooted in tradition but always looking forward. I draw inspiration from my ethnic background—Italian roots, New York family, and the energy that comes with both. I reimagine classics with modern technique and a creative edge, aiming to make each dish both soulful and elevated.

Getting to where I am today wasn’t easy. It’s taken years of hard work in kitchens, spending money I didn’t always have on cookbooks, tools, and ingredients—anything that could help me grow. I’ve sacrificed a lot of time, missed key family moments, and put everything on the line to build something real. There’s no clocking out when you’re building a dream.

The biggest lessons I’ve learned? Bet on yourself. Stay hungry, stay humble, and never stop refining your craft.

What I want people to know is this: The Branded Chef isn’t a trend or a persona—it’s who I am. A brand born from passion, pain, and purpose. Every dish tells that story.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If my best friend was visiting for a week, I’d make sure they got a real taste of what Southern California has to offer—great food, good vibes, and a little bit of everything in between.

We’d kick things off in Venice with dinner at Felix, one of my favorite spots for handmade pasta—it’s soulful, refined, and full of heart. The next day, we’d cruise down the coast to Long Beach and have dinner at Heritage—the only Michelin-starred restaurant in the city. It’s intimate, creative, and definitely a hidden gem most visitors miss.

One afternoon we’d head to Normita’s Surf City Tacos (formerly Normedas) in Huntington Beach for some of the best fish tacos around—simple, fresh, and right by the ocean. We’d spend a few hours just hanging out at the beach, catching a sunset, maybe hopping into a bonfire scene if one sparks up.

Other days would be a mix of beach mornings, farmer’s markets, a trip to Malibu for some wine tasting or hiking, and maybe a night in downtown L.A. for cocktails at Death & Co or Bar Lis. And of course, I’d cook a meal at home—because no trip would be complete without sharing what I do best.

Southern California is full of energy, creativity, and flavor—and I’d want them to experience all of it.

Who else deserves some credit and recognition?
Absolutely—this shoutout goes to my fiancé Laura. She works hospitality for The Branded Chef and understands the grind, the long hours, the pressure to create something meaningful night after night. She’s not just supportive—she’s involved. From helping me fine-tune menus to offering honest feedback, to just being there when I come home late and exhausted—she gets it. Her belief in me, even when I’ve questioned myself, has kept me grounded and focused. Behind The Branded Chef, there’s a lot of fire and hustle—but there’s also love, and Laura is a huge part of that.

I also want to thank my family—especially my mom, who helps care for my boys when I have to work. She has always supported me no matter what. I would also like to thank my dad, who’s been in my corner from the start.
