We had the good fortune of connecting with Oscar Rembao and we’ve shared our conversation below.

Hi Oscar, can you walk us through the thought-process of starting your business?
I saw a gap in the fast casual space for a concept focused on better chicken—fresh, responsibly raised, and full of flavor.

But more than that, I’ve always had a passion for bringing people together through food. I believe meals can create connection, and I wanted to build a place that felt welcoming to all—a spot where families, friends, and strangers could gather around something as simple and satisfying as really good chicken. From that vision, WILDBIRD was born. Every decision, from menu to design, was guided by that purpose.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
It started early—growing up working in my parents’ restaurants taught me the value of hard work and gave me a real feel for the energy of hospitality. That experience sparked my passion for the restaurant industry. Later, I took on marketing roles at Pollo Campero, Raising Cane’s, and Taco Bell, where I learned how powerful brand storytelling and customer experience can be. Each step built on the last, and all of it led me to launch my own concept, combining that foundation with a fresh vision for what fast casual can be.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I usually start my early morning getting a workout at equinox then I try to visit our five locations across LA. When I’m not in the mood for chicken I love eating at Hoy Ka Thai, L’Antica, Sonoratown, Le Pho, Community Goods, Vala Kitchen, the list goes on.

Who else deserves some credit and recognition?
honestly, I wouldn’t have gotten off the ground without the support of my parents. They believed in me from day one, even when this was just an idea. Their encouragement gave me the confidence to take the leap and build something that brings people together through good food.
