Meet Marco Lusso


We had the good fortune of connecting with Marco Lusso and we’ve shared our conversation below.
Hi Marco, what do you attribute your success to?
Develop “a system” were everyone know how and when things need to happen . Simplicity is the key , but unicity it’s either , so .. assuming that we hired people with different attitude and skills, we can use those to let them create , and bring the business to be unic . The simplicity is to create a consistency .

Let’s talk shop? Tell us more about your career, what can you share with our community?
I started my career in Italy , as I am Italian , working in a small pastry shop . I always had in my mind that i was looking for more from my life, traveling across the world , moving to USA , using my job to open the doors of the world. i had bosses and chef that at some point of my young career told me that that job wasn’t for me . Told me to change career . And guess what , in 2013 i opened my Bakery – Cafeteria- Pastry Shop , in Italy ( @pasticcerialuciano instagram ) . grew and improved the business for 10 years , and build a team where the store could be ran without my presence . In 2022 i won a price for the ” best chocolate Panettone ” in the competition Panettone senzaconfini ( panettonesenzaconfini.it) . I also wrote a E-Book named “Vasocottura ! ” : it’s about a new-special baking system where cakes , brioches , m,y famous panettone is baked in a a Special Jar , and give to the dessert a shelf life of 6 months-1 year without any preservatives ! The prize i won , the E-book brought me to be the Executive Pastry chef at the Durango Casino in Las vegas , Then Chef Baker for Moulin ( moulin.com ) a French bakery-Restaurant with 8 locations , and – present – be District Production Manager for Paris Baguette , where my expertise and my skills are used to keep the consistency , develop new recipes , train new employees across Texas , California , Arizona, Kansas and Oklahoma . I’ ve been also judge at the international event IBIE in Las Vegas for the ” Panettone World Championship” where i evaluated Panettone coming from north – central -south america for the final selection of the competition .

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Playa Mesa in Newport Beach . Their margarita are the best on yelp in all California !
Northgate Gonzalez Market in Costa Mesa, it seems to be in Mexico , where food , good prices , flavors , tacos , spices, meat and fruits are so fresh and with great deals. . Their fresh guac is outstanding .
Cipriani in Beverly Hills , fancy place and amazing food .
Nardo , Hungtinton beach , an italian restaurant with a great pizza , and great pasta , with a great selection of wines .

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
Also if my work is in the food industry. , I always looked and been inspired by Cristiano Ronaldo . His motivation , his consistency on the daily training and willing to improve also if he’s /has been the best football player in the world , make me understand how much I can , I have to improve to be the best , daily , every moment , in every occasion .
