We had the good fortune of connecting with Varak Sossikian and we’ve shared our conversation below.

Hi Varak, how do you think about risk?
Risk taking has become the main factor in today’s marketplace for businesses embracing the future and adapting to change. While being risk-averse may have once been a safe option, with today’s economic uncertainty this no longer holds true. Today’s economy calls for innovation and creativity, as well as the perseverance to progress with agility and adjust to new ideas quickly and effectively. In many ways, risk taking is today’s market driving force. Entrepreneurs who recognize this are the creators of those in-demand products and innovations strategically targeted to meet market demands. As quick-serve restaurant owners, risk taking and staying ahead of the curve remain especially important. While Father Nature Lavash Bistro has a well established track record and history of 36 years, taking necessary, well calculated risks remain a major factor to staying relevant with today’s tech-savvy market and consumers. Our business operations occasionally undergo necessary changes to stay up to par with market demand. A great example is the recent demand shift focused on orders being ordered online, whether through in house Pick-Up or Third Party Delivery. More orders, in recent years, were being ordered for Pick-Up and Delivery through online platforms than ever before! We recognized this and were willing to adapt to and embrace these market changes, staying ahead of the curve and therefore in a more favorable market position. This year’s COVID-19 crisis/risk took a whole restaurant industry by storm. Those restaurants slow to adapt to technology had to quickly adjust in a “sink or swim” environment and some were even forced to close their doors. We are grateful to be able to serve the public through such challenging times and have persevered while keeping our employees employed and our doors open. While this year’s crisis took a historical toll on all industry sales, the restaurants were especially impacted. The one thing it has taught us is that restauranteurs globally have two things in common; the first is that we stick together during tough times, and the other is that ‘Risk’ has brought us thus far; and will continue to inspire hope in those who dare to dream big for new possibilities and great opportunities.

What should our readers know about your business?
What sets Father Nature Lavash Bistro apart is the passion we have for what we serve. Since 1984, our foods have had a longstanding history and consistency of authentic handpicked ingredients. Nothing we serve is produced in a way that defeats the fine flavors of healthy, authentic Mediterranean food. We are a second generation family owned/family style restaurant, specializing in creating dishes that are healthy and affordable; without losing out on the flavors and deliciousness of foods we are known for serving. Maintaining a quality product that is consistent is definitely not an easy feat. The hard work we put into serving up consistently delicious meals at an affordable cost shines through in our overall guest experience. We are convinced everyone, from Vegans to Meat Lovers, could find something they love here. We stand behind our products and are open to accepting recommendations, honest feedback and first-hand experiences of our customers. Whether dining solo or picking up a feast for the entire family, Father Nature Lavash Bistro remains open for everyone; taking great care of its patrons no matter what the cost. In Summer of 2020, partnered with Old Pasadena Management District, we provided Senior Plate lunches to Seniors of Pasadena Senior Center in need of nourishing meals.

Who else deserves some credit and recognition?
Father Nature would not be where it is today if it were not for my lovely wife, Marine. She and I make the greatest married couple/business partner team, and our dedication and love for each other and our restaurant is a huge part of what has taken us this far. Being patient with each other has also taught us to be patient in business. Knowing business is a team sport, our dedicated employees and associates make a world of difference. They ensure the thorough execution and implementing of our business philosophy and mission “to spread our passion for food through our delicious products and astounding service”. We do not settle for less, and want our customers to feel the same way about our service, customer experience, and of course food. We truly care for each and every one of our customers and want it to show through our products and delivery. The support shown by our community, friends, patrons and local workers in the area is tremendous. They are the reason we still exist and we are the reason they keep coming back! A big Thanks to all those who consistently support and make us your go-to place during tough times and even during the normal.
